Pan Fried Potato Gnocchi & Garlic Prawns

Preparation time: 10 minutes
Cooking time: 10 minutes
Skills needed: Beginner
Serving Size: 4
 

24 green prawns – peeled, deviened, tails on
500gms fresh potato gnocchi
1 lemon – zest and juice
1 brunch asparagus – chopped into bite-size
pieces and blanched
Vegetable oil for frying
125 butter – cubed
2 cloves of garlic - crushed
1 Tablespoon parsley
1 Tablespoon capers

Delicious With

Pour glass of Hungerford Hill Collection Hunter Valley Semillon 2008.
Pan fry gnocchi in hot oil until slightly brown.
Add prawns and cook until they change colour.
Add butter and asparagus.
Add remaining ingredients when butter has melted – toss.
Serve.
Top up glass of Hungerford Hill Collection Hunter Valley Semillon 2008
